Nigerian Pantry Plus is a full restock in one order, built for a household that cooks properly rather than occasionally. It holds two kilograms of garri, four kilograms of poundo yam flour, two litres of red palm oil, twenty packets of Indomie chicken noodles and two hundred grams of ground crayfish. Between them these five things underpin most of what comes out of a Nigerian kitchen in a given week, and buying them together saves the usual scramble when one runs out mid-recipe. The garri is dry cassava, ready to be soaked as eba or drunk cold with sugar and groundnuts on a hot afternoon. The poundo yam flour makes smooth pounded yam in minutes with nothing but boiling water and a strong arm. Red palm oil gives jollof, egusi and banga their colour and their particular depth, and two litres is enough for a long run of cooking. The ground crayfish is the savoury note that lifts soups and stews, added by the spoonful rather than the handful. The Indomie is there for the nights when nobody wants to cook at all. Work through it as you would any store cupboard. Keep the palm oil somewhere it will not solidify in a cold kitchen, and warm the bottle gently in water if it does, which is normal and not a fault. Reseal the garri and poundo tightly after opening, as both take up moisture quickly. The crayfish keeps best in an airtight jar once the bag is open, and a little goes further than most people expect.
